2018 U.S. Foodservice Summit

April 11 and 12, 2018
Event begins at 1:00 p.m.
Revel Fulton Market
1215 W. Fulton Street, Chicago, IL 60607

A decade-long sequence of macro trends hastened the arrival of demographically and socially driven behavioral changes across many retail channels. These changes have taken root as the U.S. foodservice industry’s new normal. And, before meaningful industry recovery could set in, digital disruption added another layer of change, dramatically reshaping the consumer landscape.

For many U.S. restaurant operators and their supply chain partners, this is a redefining moment.

Much of what we once thought of as conventional wisdom is being redefined before our eyes. That includes our beliefs about retail stores, restaurant concepts, and how and where people shop, as well as consumers’ quest for experiential shopping and their attitudes about wellness. It's all open to redefinition as the forces of change shape a new foodservice reality. At the 2018 Foodservice Summit, we’ll focus on “redefining reality,” convening the industry’s thinkers, influencers, and decision-makers to illuminate a path forward in a world of new opportunity.

General Session: Reality Redefined—David Portalatin, Industry Advisor Food, & Beverage Consumption, The NPD Group

Many U.S. restaurant operators and their supply chain partners have reached their redefining moment. Much of what we once thought of as conventional wisdom is being redefined before our eyes. That includes our beliefs about retail stores, restaurant concepts, and how and where people shop, as well as consumers’ quest for experiential shopping and their attitudes about wellness. It’s all open to redefinition as the forces of change shape a new foodservice reality. Our opening session will explore what it all means and where to go next.

Who, exactly, is your customer? Understanding your consumers’ overarching attitudes about food and cooking through segmentation can unearth new insights about their needs when they dine out. This session will help participants understand the impact a focused segmentation can have on their business.

General Session: Lessons Learned from Retail: Don Unser, Group President, Retail and David Portalatin, Industry Advisor, Food & Beverage Consumption
Technology, over-stored, Amazon—these are more than just threats to traditional retailers, they are the new normal, similar to what’s happening in the restaurant industry.
